Alida's Weekly Recap - 10/29-11/5

After last week's recap, I was off to run a half marathon.  I am happy to report that operation first half marathon was a success!  The weather could not have been more perfect - cool and sunny.  People were dressed in great costumes, bands were playing at the water stations...and I finished in 2 hours and 15 minutes!

Halloween was the other big event this past week.  Adam is still too young to grasp the concept of Halloween, but he definitely enjoyed wearing his tiger costume.  In fact, he has been asking to wear his 'tiger sweatshirt' every day since.  He had a great day, including a fun trip to the zoo.



With November here, fall cooking and baking is in full effect.  This week I shared recipes using apples.  There will definitely be more fall-inspred recipes coming your way, as well as some ideas for holiday.  But for now, let's recap the week.    


This past week I shared with you:

Apple Cheddar Frittata - Apple and cheddar is a classic combination, that is simply delicious in this frittata.

Apple Cinnamon Oven Pancake - A puffy oven pancake made with apples and cinnamon.  Easy to make, perfect for fall.

Pumpkin Apple Muffins - Two great fall flavors come together in these moist and delicious muffins.

Pumpkin Ricotta Stuffed Shells from What's Cookin' Chicago - I love this idea for a savory dish using pumpkin.  Pumpkin...cheese...what could be better!

Butternut Squash Lasagna with Spinach and Sage from Bake Your Day - Butternut squash and spinach sound like such a delicious combination in this lasagna.  Cassie gives a make ahead tip, which would make this very handy with the holidays coming up.  

Sweet Potato and Kale Pizza from The Weekly Pizza - What a creative pizza!  Anything sweet potato is tops in my book...the addition of kale sounds scrumptious.

Olive Garden Breadsticks from Stick a Fork in it! - I think the best thing about Olive Garden is their breadsticks....that now can be made at home.  Yum!

Butternut Squash and Poblano Gratin from Elly Says Opa! - With butternut squash, poblano peppers, cheese and pepitas, this dish sounds amazing!  Would be great for a holiday meal.

  4. Congratulations on the half marathon!! I can't wait to reach that point! (running first 5K at the end of the month) The dishes look very delicious :)
