Alida's Weekly Recap - 11/12

Greetings!  While many folks are planning for the Thanksgiving holiday, we are planning our move at the end of the month.  Part of this means using up all the food in the house, though I had to replenish a few critical baking supplies that I used up.  So far we've been pretty successful, using up flour, baking powder, canned beans, mustard, honey and canned tomatoes, just to name a few things.  All of these creations will be featured in the coming weeks (not together of course, though THAT would be interesting!). 

The only thing I am struggling to use up is frozen mixed berries.  I bought several bags while pregnant, because I ate Greek yogurt with mixed berries every. single. day.  It was tasty and so good for us, but got a little old.  I'm resigned to the fact that may be my fate over the next couple weeks, but I'm hoping you can help.  If you have any suggestions for using up frozen mixed berries (other than smoothies because I have no blender), please let me know!

Skinny Pumpkin Pie

This is my absolute favorite recipe for fall/winter.  So easy and with no crust , this pie becomes a healthier option.  The brown sugar topping really makes it great.




Peanut Butter Surprise Muffins

If all surprises come in the form of peanut butter cups, surprise me often!  While not necessarily an every day muffin, they're definitely a fun treat.

Cooking Healthy for Me did a week long feature for a complete Thanksgiving dinner.  She even provided a handy timeline for her dinner.  In particular the Citrus Marinated Turkey Breast and Broiled Citrus Fruit caught my eye, though the entire menu looks fabulous!

Confections of a Foodie  Bride posted so many great ideas for your Thanskgiving menu.  How fun are Cranberry Margaritas!

A couple weeks ago, Brown Eyed Baker posted 40 Thanksgiving Recipes with a great variety of Breakfast, Sides, and Dessert ideas.  Cinnamon Ice Cream would be so good on pumpkin or apple pie.  Yum!

Hezzi-D's Books and Cooks did a week long feature for Thanksgiving side dishes.  I have my eye on those Baked Garlic Cheddar Grits.  I also love that she made a healthier version of the classic green bean casserole - Green Bean Casserole with Madeira Mushrooms

What's Cookin' Chicago posted about a pie swap she hosted, as well as a link to her entire library of pies and tarts.  She has so many fabulous recipes, but the French Apple with Butterflake Crust and the French Mint Silk Pie sound particularly delicious.
