Alida's Weekly Recap - 8/21-8/27

It's almost September, and fall will soon be upon us.  I don't know about you, but I'm pretty excited about that.  I love fall - cooler temperatures, leaves changing colors, pumpkin recipes, Halloween.  Yep, I'm already excited for Halloween!  Last year was Adam's first, and we dressed him up as a puppy (evidence below).  We'll see what he will let us do to him this year, as he definitely has an opinion these days!  It will be fun to watch his excitement build with each year.


The beginning of fall also serves as a reminder that I am running my first half marathon at the end of October.  I will therefore be revving up my training efforts, which also means I can rev up my eating efforts, right?  I knew you'd have my back on that one!

We made this 3 times within a week after the first time making this.  We don't ever repeat that often.  So good!




Zucchini Bread

This tried and true recipe from my mom is a taste from my childhood.  It's as good as I remembered.


Portobello and Zucchini Tacos

Roasted portobellos and vegetables are a tasty spin on a traditional taco. 








Chocolate Zucchini Cupcakes

These cupcakes were made to honor Mike's grandmother's 90th birthday.  Full of chocolaty goodness, you would never guess they contain zucchini!

Chicago Style Deep Dish Pizza from Prevention RD - I have been trying to decide on a post-half marathon dinner splurge, and this will be just perfect!

Double Peanut Butter Bars from Dinners, Dishes and Desserts - Peanut butter?  Good.  Double peanut butter?  Double good!  Love these!

Strawberry Lime Cupcakes from Sunny Side Up in San Diego - Could these be any cuter?  Seriously!  And they sound just delish. 

Baked Ziti with Summer Vegetables from Hezzi D's Books and Cooks - I definitely see this making a regular appearance around our house.  All those veggies and cheese....I cannot wait to try this recipe!

Garden Zucchini Pizza Casserole from Brown Eyed Baker - This looks SO good.  I wish I had this recipe before I used up all of my zucchini!  Saving this for next year (hopefully I'll have a garden by then).
