Over the summer I made a huge batch of Strawberry Vanilla Pancakes to freeze. Well, these pancakes were Adam's breakfast of choice this week. He usually has 1 or maybe 2 pancakes. Well...one day he ate an impressive 7 pancakes. Yes, 7. He has never eaten 7 pancakes before! I've never eaten 7 pancakes before! So now one of the goals this weekend is to find good strawberries and replish that stash. I also have several new varieties to share with you, so look for those in the coming months.
In the meantime, let's recap the week.
This past week I shared with you:
Black Bean Chili with Roasted Butternut Squash
The sweetness of the roasted butternut squash paired with the spicy chili is a delicious combination. In the winter I love to have chili for lunch, and I could seriously eat this every day.
Sweet Onion and Cheddar Cornbread
If I'm eating chili every day for lunch, you better believe I could eat cornbread every day too! While I love trying different varieties, this sweet onion and cheddar variety is a new favorite. It is definitely going to make a regular appearance this winter.
Pumpkin Cinnamon Chip Scones
This was my first attempt at making scones, and I think it's fair to say that it will not be the last. They're tasty and so easy (but that easy part can be our little secret). The pumpkin and cinnamon chip combo is incredible. I'm pretty sure I could eat these scones every day too!
So many blogs, so many delicious recipes. It is always hard to choose, but here are a few that caught my eye this week:
Pumpkin Brown Sugar Creme Brulee from sweetlilpiggy - Pumpkin and brown sugar in creme brulee. Yes please! This sounds fantastic!
Mini Reese's Cupcakes from Wilde in the Kitchen - These mini peanut butter cup cupcakes look like a little bite of heaven.
Baked Ginger Chicken from The Deep Dish - Always looking for quick and easy ways to cook chicken, and this ginger chicken is quick, easy and sounds delicious!
Pumpkin Pie Blizzard from Dolce Dough - LOVE this make-at-home variety of a DQ pumpkin pie blizzard.
Carrot Cake with Cream Cheese Frosting from made in melissa's kitchen - So the carrot cake and cream cheese frosting sound absolutely amazing, but you have to see what Melissa did with this cake. It is BEAUTIFUL.
That's all folks. Have a great weekend!
